The team designed a knife for Pip Lacey, renowned for Hicce, who sought a versatile tool for fish carving and preparation. Struggling to find one with a comfortable handle for extended kitchen use, they crafted a solution. Pleased with the result, they decided to offer it to others facing similar challenges. The knife, with optimal flexibility and razor-sharp edge, is ideal for tasks like filleting fish, carving gammon, or breaking down beef ribs, where a conventional carving knife falls short.
